Production

The salt extraction technique, adopted in the Trapani saltworks, is based on the spontaneous evaporation of sea water. 

Since the earliest times the saliferous countryside has been naturally linked to the succession of seasons, starting in March-April and ending in October. The winter semester remains the period of natural rest of the basins that are prepared for the production of the following season.

The salt is produced through a selective process of "fractional precipitation". Only when the brine reaches the state of saturated solution, is it introduced into the crystallization tanks, where it precipitates sodium chloride, creating thicknesses that can reach 12 to 15 centimeters. 

Harvesting is carried out either by hand or mechanised. The latter mode allows efficient harvesting while preserving all the characteristics of sea salt.

Hand-harvesting

 

Harvesting by hand is done according to the traditional system that has been handed down for generations.

The salt workers enter the crystallization tanks and begin to break the crust with the help of crushing poles. Once this manual crushing is finished, the salt workers, using a special iron shovel, proceed to shape small piles of salt, making the tanks look like a "chessboard".

Subsequently, the salt is transported by wheelbarrows to the banks of the salt pans, creating ever larger prism-shaped heaps. Once the first harvest is completed, preparations are made for the next one in mid-August and, weather conditions permitting, for the third harvest at the end of September.

The crystal contains all the precious trace elements (Magnesium, Fluorine, Iodine and Potassium) that make the sea salt crystal rich.

Mechanized harvesting

 

The mechanized collection is made with a special machine that, thanks to a blade, allows to collect our salt leaving a thin crust on the bottom of the tank.

By means of conveyor belts, the salt is loaded onto the wagons of a small train which allows the freshly harvested salt to be transported directly to the production plant.

The product, once washed in countercurrent and dried, is ready to be packed in our factory.
