"Those who really want to talk about saltworks should come here, in the west of Sicily, to this coastal area that covers an area of about 1,400 hectares; old, very old saltworks, founded by the Phoenicians" (Voltaire).

The oldest notations, dating back to 1154, already describe Trapani completely surrounded by the sea and salt pans.Trapani the capital of salt, therefore a predestined capital, since there is no place in the world where a scenario unchanged over the centuries is presented to the eyes of visitors.

Despite the innovations in the production cycle, which have been activated gradually over the centuries, the area still represents an ecological system, naturally balanced.

The saline system, in fact, feeds on organic matter (plankton) and inorganic matter (sea water), while the energy used is solar and wind energy. The functional relationships between the different parts of this complex organism define an incomparable natural ecosystem.

Environment and traditions

The conservation of the environment is a prerogative inherent in the saliculture itself, the salt-pan can in fact be considered an environment created with 4 hands by man and nature and is one of the very rare examples of virtuous collaboration between mankind and the environment. Proof of this is that our saltworks, thanks to the enormous biodiversity that they are able to catalyse, have been a protected nature reserve since 1991.

For the company, since its inception, the proximity to the territory and its traditions are the cornerstones. Among the various interventions made for the protection of the environment we remember the original restoration of some of the ancient windmills of the salt-pan, symbols of the salt tradition of Trapani and Marsala.
